Sesame Sweet Potatoes (Appetizers - Vegetarian)


* 2 tbsp Oil
* Salt to taste
* 2 tbsp Honey
* 1 tbsp Soya sauce
* ½ cup Orange juice
* 2 tsp Sesame seeds
* 1 tbsp grated Ginger
* 3 large Sweet potatoes


1. Preheat oven to 400°.
2. Cut off the pointy tips of the sweet potatoes and discard. Peel sweet potatoes; cut them into 1-inch squares.
3. Put the pieces in a wide, shallow baking pan or an ovenproof skillet.
4. Drizzle with oil and stir the potatoes, turning to coat them with oil. Sprinkle with sesame seeds, salt and pepper.
5. Place in the oven to bake for 30 minutes.
6. Combine ginger, honey, orange juice and soya sauce; stir to dissolve honey.
7. When the sweet potatoes have baked 30 minutes, pour the orangejuice mixture over the potatoes, stir and bake 10 more minutes, untilpotatoes are tender and dressing has been absorbed.

Tip: Let raw potatoes stand in cold water for at least an hour before frying, to improve their crispness.
